So, I am obsessed with any type of cooking show. I mean, I salivate while watching. It's sort of like what porn is for men with me. So, I had seen this particular episode of Barefoot Contessa a few times now. It happened to come on again Saturday afternoon. When we were in the grocery Sunday, about to check out, S turns and says, "Why don't we grab a chicken, and we can make that flattened chicken deal." So, I scooted back, grabbed a chicken and off we went!
The chicken deal he was referencing happens to be Tuscan Lemon Chicken
from Ina Garten. I did as I had watched her do on the show, pulled out the neck and giblets, cut out the back bone and wrapped it and threw it in the freezer for stock at a later date. Here's the little bird chillin' in the marinade.
Now, we originally were going to fire up the charcoal pit and grill this bad boy. However, in the afternoon it was so flippin' hot that we changed our minds. Out came our cast iron grill pan, and little poulet was mooshed on there with a smaller cast iron pan on top.
Cook baby, cook! And it did for about 15 minutes on each side.
It was pretty darn good. The best part is that we still have the breasts left over for tonight. I may pick it and use the grilled potatoes, corn, peppers, zuchs, garlic and mushrooms that we have leftover to create some sort of hodgepodge casserole.
